It’s been a while, but here’s another family favorite that I have added to the illustrated collection. It’s so good, that honestly I would recommend making a double batch. This recipe is from Cooking Light Magazine, November 2009 recipe. I don’t always make the slaw, but it’s a nice side.

The news is crazy and uncertain and scary right now. Working in my garden, baking, reading books instead of doom scrolling, and drawing are some of my coping mechanisms. Also doing small things to uplift my community. It would be great to throw myself into the studio and turn all the angst into artwork. But it’s hard to focus and also the economy is tumultuous, which unfortunately is a reality working artists have to face. Anyway, I’ve turned to my kitchen for solace. At this rate, I will need to turn to the gym soon.

This is a great recipe. I originally ripped it out of my November 2009 issue of Cooking Light magazine (I miss magazines!) when we were going to move cross country and I couldn’t move all my magazines. So I ripped out recipes that looked interesting and put them all in big bulging binders….I have barely scratched the surface of trying out all the recipes that are in my binders. So glad that I tried this one a few years ago. It’s a keeper!
