Oreo Ice Cream Cake

It’s been a while since I added a recipe to my illustrated recipe collection that I have been working on for my kids. Recently though we made this Oreo Ice Cream Cake for a barbecue with friends that my kids invited over and I thought I better add this to our collection. I have it written on a piece of paper that always seems to get misplaced and so now, it is forever in my book and on here. I got this recipe from my mother in law years ago and it was something that my husband loved eating when he was growing up and honestly, it’s just yummy. Not healthy for you, nope, not one bit. But sometimes you just need to have a bite of sweetness.

When my kids were little I always gave them the task of crushing the Oreos to make the crumbs. I did have to keep an eye on them though as cookies intended for the crumb mixture would disappear into someone’s mouth.

My mother in law told me that you can either add caramel topping or fudge topping. We love caramel so that’s what we add. And also we, my midwestern husband and I, always have an argument about how to pronounce the word “caramel”. I grew up in the mid Atlantic east coast and I pronounce all three syllables- “care- ah-mel”. He says “car-mel”. I’m like, there’s an actual vowel there! Are we just deciding to ignore its existence?

Either way you pronounce it, it is delicious.

Also, when I decided to draw an Oreo cookie for this, I was like, what was I thinking? But I persevered and I’m happy I took on the challenge. It’s not perfect, but it makes me happy. I love putting pencil to paper, no matter what the subject. Even when it is challenging it calms my nervous system somehow.

  1. It’s a great Oreo and I am also in the camp of care-ah-mel. This recipe looks like the perfect end-of-summer treat and I bet they freeze well if they aren’t snatched up at the first offering!
